Ingredients

3/4 cup old-fashioned rolled oats
3/4 cup white whole wheat flour
1/2 cup vanilla protein powder
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1 teaspoon kosher salt
1 teaspoon ground cinnamon
1 large egg
3 large bananas, mashed (about 1 1/4 cup)
1/2 cup plain Greek yogurt

Instructions

Preheat oven to 350°F (175°C)
Line an 8×4-inch loaf pan with parchment paper
In a large bowl, whisk together oats, flour, baking soda, baking powder, salt, and cinnamon
In another bowl, whisk egg until frothy
Add mashed bananas and Greek yogurt to wet ingredients, stirring until smooth
Fold wet ingredients into dry ingredients until just combined
Pour batter into prepared pan and smooth top
Bake for 50-60 minutes, or until a toothpick inserted in center comes out clean
Cool in pan for 10 minutes, then transfer to a wire rack

Notes

Substitute flax egg (1 tbsp flaxseed + 3 tbsp water) for egg
Use all-purpose flour if needed
Store in airtight container for up to 3 days
Freeze slices in a single layer before sealing
