15.25 ounce box lemon cake mix
1/2 cup vegetable oil
2 large eggs
1 lemon (zest and juice)
1/4 cup powdered sugar
Instructions
Preheat oven to 350°F (175°C)
In a large bowl, combine cake mix, vegetable oil, and eggs
Mix until smooth, then stir in lemon zest and 1 tablespoon lemon juice
Spoon 1 tablespoon of dough onto a baking sheet lined with parchment paper
Roll each dough ball in the remaining 3 tablespoons powdered sugar
Bake for 10-12 minutes until slightly golden
Cool on the baking sheet for 5 minutes before transferring to a wire rack
Notes
Use room temperature eggs for better texture
Adjust oil to 4-5 tablespoons if dough is too dry
