Ingredients
7 tablespoons (99g) unsalted butter, softened
3/4 cup (150g) packed light or dark brown sugar
1 teaspoon pure vanilla extract
1 cup (125g) all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup (85g) old-fashioned or quick oats
1/2 cup (100g) granulated sugar
3 large egg yolks
2 tablespoons all-purpose flour
Zest and juice of 2 large lemons (about 3 tablespoons juice)
2 tablespoons (28g) unsalted butter, melted
Instructions
Preheat oven to 350°F (175°C)
Line an 8×8-inch baking pan with parchment paper
Mix crust ingredients: cream butter, brown sugar, and vanilla until fluffy
Add flour, baking powder, salt, and oats
Press half the mixture into prepared pan as base
Beat egg yolks, granulated sugar, and lemon zest/juice until pale
Add flour and melted butter, mix until smooth
Spread filling over crust
Top with remaining crumb mixture
Bake 25-30 minutes until golden
Cool completely before slicing into 16 bars
Notes
For best texture, use room-temperature butter
Old-fashioned oats give more texture than quick oats
Store in airtight container up to 3 days
Substitute 1/2 cup fresh lemon juice + 1/2 cup white vinegar if lemons are unavailable
