Ingredients
6 to 8 sheets plain matzo
1 1/2 cups strong coffee, cooled
2 tablespoons sugar (for coffee)
2 cups heavy cream
1 package (3.4 oz) instant vanilla pudding mix (Passover-certified)
1/4 cup powdered sugar
4 oz semi-sweet chocolate, finely shaved or grated
Instructions
Soak matzo sheets in cooled sweetened coffee until softened (about 5 minutes)
In a bowl, whip heavy cream until soft peaks form
Mix in instant pudding and powdered sugar until smooth
Layer soaked matzo and cream-pudding mixture in a springform pan
Refrigerate for 8 hours or overnight until firm
Top with shaved chocolate before serving
Notes
Use whole wheat matzo if needed
Replace sugar with honey for a natural swap
Chill in an airtight container for up to 3 days
Serve at room temperature for best texture
