Ingredients
2½ cups (318g) all-purpose flour
2 teaspoons baking powder
¾ teaspoon fine sea salt
2 sticks (226g) unsalted butter, at cool room temperature
1¼ cups (250g) granulated sugar, plus ¼ cup (50g) for rolling
1 large egg plus 1 egg yolk
1 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C)
In a large bowl, whisk together flour, baking powder, and salt
Using a stand mixer or hand mixer, cream butter and 1¼ cups sugar until light and fluffy
Add egg, egg yolk, and vanilla; mix until combined
Gradually add dry ingredients and mix until just incorporated
Turn dough out onto a floured surface and divide into two discs
Wrap in plastic and chill at least 30 minutes
Roll one disc to ½-inch thickness
Sprinkle with 2 tablespoons granulated sugar
Cut into desired shapes
Place on parchment-lined baking sheets and sprinkle remaining sugar on top
Bake 8-10 minutes until edges are golden
Let cool on baking sheet 5 minutes before transferring to racks
